The dietary care approach is a set of actions carried out by a dietician, as part of nutritional care. Its purpose is to guarantee nutritional intakes quantitatively and qualitatively in accordance with the physiological state of people, their pathology and the treatments pursued, while taking into account their preferences, their cultural and religious habits, their individual capacities, and preserving the pleasure of eating.
The dietary care approach provides a framework for the dietary consultation and includes specificities in terms of tools, strategies and evaluation, according to the orientations of the consultations.
The dietary care approach is an evolving process, centered on the health of the person being cared for as a whole. The stages of the dietary care process are as follows :
is an essential step in the dietary care process. It is based on the clinical reasoning of the dietician from a systematic and detailed collection of information concerning the analysis of the dietary balance, nutritional disorders, medical objectives, experience and lifestyle of the person. It leads to the construction of a personalized dietary strategy: formulation of dietary objectives with nutritional aims that can be achieved by the person being cared for, proposals for negotiated care actions, evaluation.

During the consultation, the initial objective can be reoriented or supplemented by other objectives according to the needs and expectations of the patient. Patient information and the educational approach are an integral part of the dietary care process.

The initial consultation systematically begins with a diagnostic phase. This phase, more or less developed depending on the pathologies, the health situations and the characteristics of the patient, makes it possible to direct the rest of the consultation(s) towards a therapeutic, educational and/or preventive action.
The first consultation generally lasts +/- 60 minutes. During this consultation, data relating to the patient will be recorded. I start by collecting personal information in order to complete his file. Then I establish a health check by collecting the following information :
The next step is characterized by a food history. This step consists in evaluating the patient's diet in order to highlight the caloric intake and the intake of macro- and micronutrients. This assessment is often based on the previous day's meal. This information will allow me to formulate preliminary dietary advice and generally adapt his diet.
After each consultation, the patient will receive by email a dietary report containing his health report, his current measurements, the dietary advice given during the consultation and in some cases educational documents.
In the majority of cases, I ask patients to fill out an electronic food diary for the next consultation.

The first follow-up consultation is organized usually after 2 weeks. It ensures complete dietary care with complementary therapeutic, educational and/or preventive actions. The follow-up cycle is decided and organized in agreement with the person treated (number and frequency of consultations).
The purpose of this consultation is to analyze the period since the first consultation. The patient will explain to me his experience, how he lived this period, what effects the dietary adaptations had on his life, his well-being and his health. I will also seek to understand if there were any difficulties in applying the dietary advice formulated during the first consultation and if there are any, with the patient, we will try to understand why.
Afterwards, I will do a new anthropometric assessment in order to see the evolution of the weight and the body composition if the accompaniment of the patient requires it.
In most cases, the patient will have completed a food diary before coming to the consultation. At this point, I will have carried out a thorough analysis of his diet and eating habits. This analysis will allow me to formulate more specific and better adapted dietary advice.
At the end of this consultation, the patient will have all the necessary information so that, together, we can achieve the desired goal.

Dietary follow-ups last 30 minutes and are intended to review the patient in order to periodically assess their situation with them. This will allow me to gradually assess the health, well-being and morale of the patient. The patient will have the opportunity to express their desires and fears so that we can adapt the therapy.
During each follow-up, a new anthropometric evaluation will be carried out if the support of the patient requires it.
